Garlic Lamb Bruschetta

1/2 pound ground lamb, lean
1/8 teaspoon cayenne pepper
1 loaf (16 ounces) French baguette
1 cup Jarlsberg cheese, finely shredded
olive oil
1/4 cup ripe olives, pitted, finely chopped
1/2 teaspoon salt
1/4 cup low fat sour cream
1/4 teaspoon garlic powder
40 fresh basil leaves




Slice baguette into 1/2-inch slices, about 40 slices. Brush both sides of each slice with olive oil. Place on a baking sheet and toast in a 400-degree oven for 8 to 10 minutes, turning slices over once, until lightly toasted. Remove to a rack. Meanwhile in a skillet or saucepan, cook ground lamb until brown, stirring frequently to break up chunks. Drain well; remove from heat. Stir in salt, garlic powder and cayenne until well blended. Add shredded cheese, chopped olives and sour cream. Toss to mix well. Spread about 1 rounded teaspoon meat mixture on each baguette slice. Place on baking sheet. Broil 4 to 5 inches from heat for 1 to 2 minutes or until bubbly and cheese is melted.

While still hot, press a fresh basil leaf on top of each. Serve warm.
