Grilled Mushrooms with Lamb and Herbs

6 ounces lamb, cooked, cut in 1/2-inch pieces or to fit mushrooms
36 mushroom caps, medium
1/4 cup olive oil
1/4 cup fresh lime juice
1 green onion, small, minced
1/2 teaspoon ginger, root, grated
1/4 teaspoon salt
1/4 teaspoon black pepper
parsley, snipped, chopped




Combine all ingredients except mushrooms and lamb in blender and mix until finely minced. Brush each mushroom generously with mixture and arrange on baking sheet. Top each mushroom with a lamb cube. Broil 4-inches from heat source until hot. Garnish with chopped parsley.


Leftover leg of lamb may be used in this recipe.
