1 3/4 pound leg of lamb, boneless
1/2 cup pineapple juice, unsweetened
1/3 cup reduced sodium soy sauce
1 tablespoon honey
1 garlic clove, crushed
1/2 teaspoon ground ginger
2 tablespoons dry sherry
1 can (14 ounces) pineapple chunks, each piece cut in half (reserve liquid)

Cut lamb into 1/4-inch diagonal slices, approximately 2-3 inches long and 3/4-inch wide. Place lamb in shallow glass dish. In a small bowl, combine pineapple juice, soy sauce, honey, garlic, ginger and sherry; pour over lamb strips. Cover and marinate in refrigerator for at least 2 hours or overnight. Wrap one piece of lamb around one piece of pineapple; secure with a round toothpick. Broil 5-8 inches from source of heat for 3 minutes, or to desired doneness.
