Mushroom Spinach Salad
For color and taste, use a variety of mushrooms in this salad.

8 ounces mushrooms, fresh
1/2 pound spinach, fresh
1/4 cup lemon juice
1 tablespoon salad oil
1 teaspoon onion powder
2 teaspoons nonfat milk, instant powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon mustard powder
1/8 teaspoon ground black pepper




Rinse, pat dry and slice mushrooms (makes about 2 3/4 cups). Wash and drain spinach; tear into bite size pieces. Place mushrooms and spinach in a salad bowl. In a covered container combine remaining ingredients; blend until smooth. Pour over mushrooms and spinach; toss gently.
