Penne Pasta with Mushrooms and Dried Tomatoes

8.5 ounce jar dried tomatoes
8 ounces mushrooms, sliced (white, shiitake or crimini)
2 cloves garlic, minced
1 can stewed tomatoes, crushed
8 ounces penne pasta, cooked
spinach leaves, torn, optional
pine nuts, toasted, optional
slivered almonds, toasted, optional
Parmesan cheese, grated, optional




In oil from an 8.5 ounce jar of oil-packed dried tomatoes, saute 8 ounces of sliced white, crimini or shiitake mushrooms and garlic over medium-high heat until mushrooms are golden, about 5 minutes. Thinly slice dried tomatoes, add to mushrooms along with a can of dried and crushed stewed tomatoes. Cook another 5 minutes. Toss with 8 ounces cooked penne pasta; if desired, toss in torn spinach leaves, pine nuts or almonds and Parmesan cheese. Garnish with chopped fresh tomatoes, if desired.
