Stove Top Pilaf
Substitute 1/4 cup of broth with an equal amount of wine to boost the pilaf's flavor.

1 tablespoon unsalted butter or margarine
1 tablespoon Vegetable Oil
1/4 cup onions
1 cup long grain rice
1/4 teaspoon dried thyme
2 cups chicken or beef broth or fish stock
salt
freshly ground pepper




Heat the butter and oil in a small saucepan over medium heat. Add the onions and cook for 2 minutes, stirring often, until softened. Add the rice and thyme and cook for 1 minute, stirring often, until the rice turns opaque.

Add the broth and season with salt and pepper to taste. Bring to the boil. Cover the saucepan, reduce the heat to low and simmer for 20 minutes until the liquid is evaporated and rice is tender. Fluff the rice with a fork and serve immediately.
