Spicy Vegetable Grill

1 cup red seedless grapes
1 cup sliced sweet red peppers
1 cup thinly sliced onion
1/2 cup thinly sliced jicama
1/4 cup thinly sliced Anaheim chili pepper
1 teaspoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup walnuts, toasted
2 teaspoons fresh lime juice

Prepare a charcoal or gas grill so that the coals are medium-hot.

Toss the grapes, peppers, onion, jicama, pepper, oil, and seasonings until mixed. Lay a large rectangle of heavy-duty foil in a work surface and pile the mixture in the center. Fold the foil around the food, leaving an opening in the top as a vent.

Grill for about 8 minutes. Very carefully and using pot holders, open the foil packet and stir the vegetables. Re-wrap and grill for about 7 minutes longer.

Open the packet with care -- the escaping steam is hot-- and spoon into a serving bowl. Season with walnuts and lime juice. Serve immediately.
