Santa Fe Guacamole

3 ripe medium-size avocados, halved, pitted and skins removed
1/4 cup finely chopped white or yellow onion
1 ripe medium-size tomato, peeled, seeded and chopped
1 clove garlic, finely chopped
2 tablespoons lime juice
2 tablespoons chopped fresh coriander, optional
1 tablespoon chopped fresh chili pepper, or 2 tablespoons chopped canned green chili peppers
salt




Mash all the ingredients together in a bowl with the back of a fork until chunky and well mixed. Season with salt to taste. Chill.
