Santa Fe Meat Loaf

2 pounds lean ground pork
1 teaspoon cooking oil
2 medium onions, finely chopped
4 garlic cloves, crushed
1 jalapeño pepper, seeded and minced (wear rubber gloves when handling hot pepper)
4 tablespoons dried tomatoes, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1 1/2 teaspoons salt
1 teaspoon fresh thyme
1/2 teaspoon cayenne pepper
1/2 cup fresh parsley, finely chopped
1/2 cup dry bread crumbs
1/2 cup skim milk

Preheat oven to 350 degrees. In large nonstick skillet heat oil over medium-high heat. Sauté onions and garlic until soft, about 10 minutes; cool slightly and transfer to large bowl. Add remaining ingredients and mix thoroughly. Place mixture in a 9- x 4 1/2- x 2 1/2-inch loaf pan and bake for 1 1/2 hours. Remove from the oven and allow to rest 10 minutes before removing from pan. Slice to serve warm, or wrap well and refrigerate for sandwiches.
