Classic Onion Soup

6 tablespoons butter, or margarine
8 yellow onions, peeled and sliced (about 2 1/2 cups)
4 teaspoons sugar
2 quarts canned low sodium chicken broth, or beef broth
1/2 cup brandy, to taste (optional)
salt, to taste
fresh ground black pepper, medium grind, to taste
1/2 baguette French bread, sliced, toasted
Grated Romano cheese
chopped fresh herbs, for garnish




In a large 4- to 6-quart saucepan or skillet, melt the butter over medium heat. Add the onions and cook, stirring often, for about 12 minutes or until tender and golden brown. Sprinkle with sugar and stir for 1 minute.

Add the broth, cover and bring to boil. Simmer for 12 minutes to blend flavors. Add brandy and cook for about 2 minutes longer. Season with salt and pepper.

To serve, ladle soup into shallow bowls and float slices of toast on top. Sprinkle lavishly with cheese. Garnish with fresh herbs, if desired.
