Pasta with White Clam Sauce

3 tablespoons olive oil
2 cloves garlic, finely chopped
3 tablespoons shallots, finely chopped
1/3 cup parsley, finely chopped
1/2 cup dry white wine, or bottled clam juice
1 1/2 cups clams, fresh and chopped, including their liquor
1/2 teaspoon salt
freshly ground black pepper
1/8 teaspoon oregano
1 pound linguine, or spaghetti

Heat the olive oil in a saucepan over medium heat. Add the garlic, shallot and parsley and cook, stirring, for 4 to 5 minutes. Add the wine, clams, salt, pepper and oregano and simmer for 15 minutes.

Meanwhile, cook the pasta in a large saucepan of boiling, salted water according to the package directions. Drain well and transfer to a warmed serving bowl. Add the sauce, toss quickly until well combined and serve immediately.
