Spaghetti with Chicken and Peanut Sesame Sauce

3 tablespoons Crisco® Vegetable Oil
12 ounces Boneless Chicken breast, cut crosswise into thin slices
1/3 cup chunky peanut butter
2 medium-size cloves garlic, chopped
1 tablespoon sesame oil
2 teaspoons low sodium soy sauce
1/2 teaspoon dry sherry
1/8 teaspoon cayenne pepper
1 teaspoon honey
12 ounces spaghetti
2 scallions, chopped
2 tablespoons fresh coriander, chopped
salt
freshly ground pepper




In a large frying pan, heat 1 tablespoon of oil over medium-high heat. Sprinkle the chicken with salt and pepper and add it to the pan. Cook, stirring, for about 3 minutes until the chicken is cooked through. Remove the chicken to a large serving bowl.

In the bowl of a food processor or blender, combine the peanut butter, garlic, 2 tablespoons of vegetable oil, sesame oil, soy sauce, sherry and cayenne. Process to a paste and add more cayenne if desired. Stir in the honey and add the mixture to the bowl with the chicken.

Bring a large pot of water to the boil for the pasta. Add salt and the spaghetti and cook for 8 to 10 minutes until the pasta is tender. Drain in a colander and rinse under cold running water. Add the spaghetti, scallions and coriander to the bowl with the chicken and peanut sauce and toss to coat the pasta with the sauce. Season with pepper and serve.
