Pasta with Tuna and Capers

3 tablespoons olive oil
1 small red onion, thinly sliced
1 can (6 1/2 ounce) tuna in water, drained
1 (28-ounce) can tomatoes, whole, drained and chopped
3/4 pound pasta, small shells
2 tablespoons capers
4 tablespoons parsley, finely chopped




Heat the water for the pasta in a large saucepan.

Heat the oil in a large skillet over moderate heat. Add the onion and cook, stirring, for 5 to 8 minutes until softened. Add the tomatoes and cook for about 20 minutes. Stir in the tuna, season with salt and pepper to taste, and cook for another 5 minutes.

Meanwhile, cook the pasta in boiling salted water for 12 to 15 minutes until tender. Drain in a colander and then put in a warmed serving bowl.

Stir the capers and parsley into the sauce. Pour over the pasta and toss to combine. Serve immediately.
