Pesto Pita Pizza
These pita pizzas are good for light suppers and snacks.

1 envelope pesto sauce mix, (such as Knorr)
1/2 cup water
1/4 cup tomato sauce, preferably, no salt added
4 six-inch round pita bread, or ready made pizza crusts
1/2 cup Monterey Jack cheese, (about 2 ounces)
1 teaspoon Italian seasoning, or mixed Italian herbs




Combine the pesto sauce mix and water and blend well. (Omit the oil called for in package directions.) Microwave on high for 3 minutes, stirring once, or boil on the stovetop for 3 minutes.

Preheat the oven to 450 degrees. Stir the tomato sauce into the pesto mix and spread each pita or pizza crust with about 2 tablespoons of the sauce. Sprinkle each with 2 tablespoons cheese and 2 tablespoons walnuts. Sprinkle each pizza lightly with Italian herbs. Place on a baking sheet and bake for 8-10 minutes, or until the sauce is bubbling and the cheese is melted.
