Tuna Nicoise Wraps

1 can (6 ounces) solid white albacore tuna in water
6 ounces sweet roasted peppers
6 ounces (1) tomato
4 ounces white onion
2 teaspoons capers, drained
2 teaspoons garlic, minced, roasted
3/4 teaspoon anchovy paste
2 9-inch rounds flatbread
4 leaves romaine lettuce




Drain the tuna. Drain the roasted peppers and cut them into large pieces. Core the tomato and cut it crosswise into 4 slices. Cut the onion into 2 slices, then cut each slice in half.

In a food processor or blender, combine the capers, roasted peppers, roasted garlic, and anchovy paste and puree to a chunky consistency (about 1/2 cup).

Spread 2 tablespoons of the puree on each round of flatbread and cover with 2 lettuce leaves. Top 1 leaf on each round with 2 slices of tomato, half the tuna, 2 pieces of onion, and 2 tablespoons of the remaining puree. Fold each round over the filling, cut in half, and secure closed with toothpicks.
