Chicken Yakitori

2 tablespoons reduced sodium soy sauce
1 tablespoon dry sherry
1 tablespoon rice vinegar
1 tablespoon brown sugar, firmly packed
1/2 tablespoon minced garlic, (about 2 cloves)
1 tablespoon finely grated fresh ginger
8 ounces boneless skinless chicken breast, trimmed and cut into 16 cubes (about 1 1/4-inch cubes)
3 ounces green bell pepper, cut into sixteen 1-inch cubes
2 scallions, trimmed to white and light green parts, quartered crosswise




Combine the soy sauce, sherry, vinegar, brown sugar, garlic, and ginger in a mixing bowl. Add the chicken, mix thoroughly, cover, and marinate at room temperature for 1 hour.

Meanwhile, soak eight 8-inch skewers in water.

Preheat the broiler.

On each skewer, intersperse 2 chunks of chicken, 2 bell pepper cubes, and a piece of scallion. Wrap the exposed ends of the skewers with aluminum foil. Position as close as possible to the heat source and broil for 2 minutes; turn, and broil for another 2 minutes.
