4 ounces red onion
7 ounces (about 1) tart red apple, firm
2 teaspoons Dijon mustard
2 tablespoons balsamic vinegar
2 tablespoons dark brown sugar, packed
3 ounces (about 1 1/2 cups) baby spinach
ground pepper, to taste

Peel the onion and slice thin (about 3/4 cup). Core the apple and slice very thin (about 1/3 cups).

For the dressing, in a small bowl, combine the mustard, vinegar, and brown sugar and mix well.

Combine the spinach, onion, and apple in a bowl. Add the dressing and black pepper. Toss to mix and coat thoroughly. Divide among 4 salad plates.
