Mushroom Dressing

1 1/4 cups water
1 ounce (about 6 large) dried shittake mushrooms
1 shallot
1/4 cup bourbon
1/4 cup balsamic vinegar




In a small saucepan, combine the water and mushrooms. Bring to a boil over medium-high heat. Meanwhile, mince the shallot. Boil the mushrooms for about 8 minutes, until they have softened and the liquid has reduced.

Fit a sieve over a measuring cup and pour in the contents of the pan. (You should have about 1/2 cup mushroom stock; squeeze the mushrooms to release additional liquid if needed.) Reserve the mushrooms, rinse out the saucepan, and return the stock to the pan. Add the bourbon, shallot, and vinegar. Bring back to a boil over medium-high heat and boil for 1 minute. Remove the pan from the heat, cover, and set aside.

Warm just before serving.


Note: Shittake mushrooms are also called black Chinese mushrooms.
