Rack of Pork with Parslied Crumbs
This pork is so juicy it doesn't need a sauce. Serve it with baked potatoes and a green vegetable.

1 whole rack of pork, chine bone trimmed, about 7 or 8 ribs
Freshly ground black pepper
salt, to taste
3/4 cup coarse mustard
1 1/2 cups fresh bread crumbs
3/4 cup flat-leaf fresh parsley, minced
1 tablespoon dried thyme, crumbled
3 garlic cloves, peeled and crushed

Heat the oven to 350 degrees.

Season the pork with salt and pepper, as desired. Brush the pork with 1/4 cup mustard.

In a medium mixing bowl, combine the remaining mustard with the rest of the ingredients. Press this crumb mixture evenly over the top of the pork.

Arrange the rack of pork, crumb-side up, in a roasting pan. Roast for about 1½ hours, or until a thermometer inserted into center of meaty part registers 150 degrees. Remove the pork from oven and let stand 10 minutes; temperature should rise to 160 degrees.

Carve pork, cutting between the ribs, and serve.
