Tuxedo Turkey Pizza
Turkey Pizza is a good way to use up your turkey or chicken leftovers. You can buy focaccia or a similar flat bread and make this tasty family meal in a flash.

2 tablespoons julienned sundried tomato, dry packed or drained, if oil packed
1/2 cup sliced mushrooms
1 (2.5 ounce) can pitted black olives, drained, sliced
1/4 cup finely chopped red onion
3 tablespoons Italian salad dressing, or white-wine vinaigrette
3 tablespoons mayonnaise, or salad dressing
1 16 ounce loaf herb focaccia, or prebaked Boboli crust
8 ounces boneless and skinless turkey breast, (or chicken) cut into strips
2 slices (2 ounces) provolone cheese, cut into strips




Preheat the oven to 350 degrees F.

Soak the tomatoes in hot water for 30 minutes to hydrate and plump them. Drain and set aside.

Combine the mushrooms, olives, red onion, and dressing. Set aside.

Spread the mayonnaise or salad dressing on the focaccia or boboli crust and put the bread on a foil-lined baking sheet. Top with turkey, cheese and tomatoes.

Heat the focaccia or boboli for about 5 minutes or until the cheese melts and the focaccia or boboli is heated through.

Top with the mushroom mixture. Cut into wedges and serve.
