Smoked Turkey Roll-Ups

6 ounces skinless smoked turkey breast
8 7-inch corn tortillas
1/2 tablespoon jalapeño pepper, chopped
2 tablespoons fresh cilantro, chopped
1 9-ounce package frozen artichoke hearts, thawed
2 tablespoons water




Shred the turkey (about 1 cup).

Wrap the tortillas in damp paper toweling and microwave at full power for about 45 seconds. Keep them wrapped until ready to use. Meanwhile, preheat a medium nonstick skillet over high heat.

Combine the turkey, jalapeno pepper, cilantro, artichoke hearts, and water in the hot skillet. Cook for about 2 minutes, stirring constantly, until the water has been absorbed and the mixture heated thoroughly.

Unwrap the tortillas. Mound 1/4 cup of the turkey mixture on each tortilla and roll each one into a cylinder.
