Plum Bread

3 cups all-purpose flour, plus 2 tablespoons
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
8 tablespoons butter or margarine, softened
1 cup sugar
3 large eggs
2 teaspoons vanilla
2/3 cup plain lowfat yogurt
1/2 pound plums, pitted, peeled and sliced




Position a rack in the center of the oven. Heat the oven to 350 degrees. Butter and flour 3 (5 1/2-inch) loaf pans. Sift 3 cups of the flour along with the baking powder, baking soda and salt through a wire strainer into a bowl.

In a large bowl, cream the butter using an electric mixer set at high speed for 1 minute until smooth. Add the sugar gradually, beating constantly for about 2 minutes until the mixture is light. Add the eggs one at a time, beating well after each addition. Add the vanilla, beating until mixed. Using a wooden spoon, stir in the flour mixture, a third at a time, alternating with the yogurt, mixing just until combined.

Put the plums and the walnuts into separate bowls. Sprinkle 1 tablespoon of flour over each and toss to coat. Fold the plums and walnuts into the batter. Divide the batter among the pans and bake for 35 to 40 minutes until a toothpick inserted into the center of the loaf comes out clean. Cool the bread in the pans for 10 minutes. Unmold the loaves onto wire racks and cool completely.
