Cranberry Muffins

1 cup whole wheat flour
1 cup unprocessed bran
1/4 cup dark brown sugar, packed
1 teaspoon baking soda
1/2 teaspoon salt
1 cup cranberries, fresh or frozen and thawed, chopped
1 cup milk
1/4 cup vegetable oil
2 tablespoons molasses
1 egg, lightly beaten

Position a rack in the upper third of the oven. Heat the oven to 375 degrees. Butter 9 muffin cups. Combine the flour, bran, sugar, soda, salt and cranberries in a bowl and mix to blend. Combine the remaining ingredients and stir into the dry ingredients until just combined — do not overmix. Fill the muffins cups about two-thirds full. Bake for 20 minutes or until risen and lightly browned.
