Roasted New Potatoes with Red Peppers

2 pounds new potatoes, quartered
1 red pepper, stem and seeds removed, cut into 1-inch pieces
1 onion, cut into 1-inch pieces and separated
3 tablespoons olive oil
1 teaspoon dried rosemary
1 teaspoon grated lemon rind
freshly ground black pepper

Heat the oven to 350 degrees.

Put the potatoes, red pepper and onion in a baking dish and pour in the olive oil. Add the rosemary and lemon rind and season to taste with black pepper. Toss until the ingredients are well coated.

Roast the potatoes in the preheated oven for 25 minutes or until they are tender and browned. If necessary, add more oil during cooking as it is absorbed by the potatoes. Serve the potatoes hot or at room temperature.
