Guilt-Free Mashed Potatoes
These potatoes are moistened and flavored with a low-fat mixture of yogurt and ricotta cheese.

2 pounds boiling potatoes, peeled and cut into 1-inch chunks
1/2 cup plain lowfat yogurt
1/2 cup part skim ricotta cheese
salt, to taste
freshly ground pepper, to taste

Put the potato chunks in a large saucepan and add cold water to cover. Cover the pan and bring to the boil over high heat. Reduce the heat to medium and boil, uncovered, for about 15 minutes until the potatoes are tender. Drain the potatoes well and return them to the saucepan. Shake the potatoes over medium heat to evaporate the excess moisture. Remove the pan from the heat.

In a blender or food processor, blend the yogurt and ricotta until smooth. Using a potato masher or a hand-held mixer at medium speed, beat the yogurt mixture into the potatoes. Continue beating until the potatoes have a creamy consistency. Season with salt and pepper to taste and serve.
