Crisp Potato Cakes
Just when you thought there was not another way to cook potatoes, here comes these easy little cakes. The crispness of these potatoes will delight children and adults alike.

3 to 4 tablespoons olive oil
2 large, well-rounded baking potatoes, (about 1 pound)
Salt and freshly ground pepper




Heat the oven to 450 degrees. Brush 2 baking sheets generously with olive oil.

Peel and slice the potatoes about 1/8-inch thick. Using about 6 slices per cake, arrange the slices on the baking sheets to make 8 rings of overlapping slices. Brush with the remaining oil and sprinkle slightly with salt and pepper. Bake for about 15 minutes until the potatoes are tender and the edges of the cakes are lightly browned. Two or three times during cooking, press the cakes down with a spatula so that the slices stick to one another. Serve 2 potato cakes per person.
