1/3 cup olive oil
3 cloves garlic, crushed
1 teaspoon freshly ground black pepper
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried rosemary, crumbled
2 tablespoons red wine vinegar
salt, to taste
12 lamb rib chops

Combine the oil, garlic, black pepper, thyme, basil, rosemary and vinegar in a shallow dish. Add salt to taste. Add the lamb chops to the mixture and turn to make sure they are well coated. Cover the dish and marinate the lamb for 20 to 30 minutes or in the refrigerator overnight.

Heat the broiler. Remove the chops from the marinade and put them on a broiler pan. Broil the lamb about 2 inches from the heat source for 6 to 8 minutes on each side.
