London Broil with Garlic-Mustard Crust
Everyone loves London broil and this cooking method makes it easy and economical to serve. Slice it at an angle and serve with potatoes, rice or garlic bread.

2 tablespoons Dijon mustard
2 medium-size cloves garlic, chopped
2 teaspoons chopped fresh rosemary
pepper, freshly ground
1 tablespoon olive oil
2 pounds London broil, about 1 1/2 inches thick

Combine the mustard, garlic and rosemary in a small bowl. Whisk in the oil and season with pepper.

Heat the broiler. Put the steak on a broiler pan and broil for 2 minutes on each side to sear the meat. Spread the meat with half the mustard mixture and broil for 3 to 4 minutes. Turn the meat, spread with the remaining mustard mixture and broil for 3 to 4 minutes until rare. Let the meat rest for 10 minutes before cutting into thin slices and serving.
