Tangy Calico Slaw with Yogurt Dressing
A new twist on an old favorite, this slaw is made with red and green cabbage, tart apples and sweet carrots.

1/2 medium-size head red cabbage, shredded (about 3 cups)
1/2 medium-size head green cabbage, shredded (about 3 cups)
3 large carrots, peeled, trimmed and coarsely grated
2 medium-size green apples, peeled, cored and coarsely grated
1/3 cup fresh chives, chopped
1/4 cup apple cider vinegar
1/2 cup plain lowfat yogurt
1/2 cup mayonnaise
2 teaspoons celery seed
salt, to taste
freshly ground pepper, to taste




In a large bowl, combine the red and green cabbage with the carrots, apples, chives and vinegar. Toss well to combine.

In a medium bowl, fold together the yogurt, mayonnaise and celery seed. Add to the vegetables and toss well. Season to taste with salt and pepper. Serve immediately or cover and refrigerate until ready to use.
