Lightened Mayonnaise
This mayo tastes good with fish and chicken and mixed into salads.

1/4 cup mayonnaise
2 teaspoons olive oil
1 teaspoon Dijon mustard
1/2 teaspoon lemon juice
pepper, freshly ground
1/4 cup plain lowfat yogurt

Put the mayonnaise in a bowl and stir in the oil, mustard, lemon juice and pepper to taste. Gently fold in the yogurt.


Lemon Mayonnaise: Add an additional 1/2 teaspoon of lemon juice and 1 teaspoon of grated lemon rind.

Herb Mayonnaise: Add 1/4 cup of loosely packed fresh herbs (such as sage, parsley or basil), chopped.

Lime and Coriander Mayonnaise: Add 1 teaspoon of grated lime rind and 1/4 cup loosely packed coriander leaves, chopped. A small amount of finely chopped, seeded jalapeno pepper adds zing. Try a quarter of a jalapeno and add to taste; remember that the pepper will get hotter as it sits.

Curry or Cumin Mayonnaise: Add 1 teaspoon of curry powder or ground cumin.

Garlic Mayonnaise: Add 1 clove of garlic, chopped.
