Poached Peaches with Almond
Serve these peaches sliced over frozen yogurt and pound cake.

4 cups water
1 cup sugar
1 tablespoon almond extract
6 ripe peaches




Combine the water, sugar and almond extract in a saucepan. Cook on high heat until the sugar has dissolved. Reduce the heat to a gentle simmer and add the peaches. Poach them, until uncovered for 15 minutes.

Remove the fruit to a rack. Peel the peaches when they are cool enough to handle. Serve at room temperature.
