Turkey Divan
This is a perfect way to use up turkey leftovers. This recipe works equally well with leftover chicken.

2 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 tablespoon chicken broth
1/4 teaspoon dry mustard
1 1/2 cups lowfat milk
1/4 cup mayonnaise
1 teaspoon lemon juice
2 cups fresh or frozen broccoli florets
3/4 pound turkey, cooked and sliced
2 tablespoons grated Parmesan cheese, optional




Put the butter in a 1-quart glass measure and microwave on High (100 percent) for 30 seconds until melted. Whisk in the flour, broth and mustard. Gradually stir in the milk. Microwave on High (100 percent) for 2 to 3 minutes until slightly thickened. Stir in the mayonnaise and lemon juice.

Put the broccoli in an 8-inch square microwave-safe pan and cover with plastic wrap. Turn back a corner to vent. Microwave on High (100 percent) for 2 to 4 minutes until the broccoli is crisp-tender.

Arrange the turkey slices on top of the broccoli. Pour the sauce over the turkey and sprinkle with the Parmesan, if desired. Microwave on High (100 percent) for 6 or 7 minutes until thoroughly heated.
