Chicken and Avocado Sandwich
Make these sandwiches with freshly grilled chicken or with leftover cold chicken.

2 cooked chicken breasts, cold
8 slices rye bread, toasted
mayonnaise
1 large tomato, sliced
1 medium avocado, halved, seeded, peeled and sliced
ground pepper, to taste
arugula




Bone the chicken and cut it into large thin slices.

Spread the toasted bread slices with mayonnaise. Arrange the tomato slices and then the avocado slices over 4 of the pieces of toast. Top with chicken slices and season with pepper. Add arugula and then cover the sandwiches with the remaining slices of toast, mayonnaise side down.
