California Avocado Cajun-Spiced Dipping Sauce

1 (8 ounces) avocado
1 1/2 tablespoon lemon juice
1 tablespoon onion, finely chopped
1 clove garlic, chopped finely
1/4 teaspoon dried thyme
1/4 teaspoon salt
large pinch black pepper, ground
pinch white pepper
pinch cayenne




Slice the avocado in half. Remove the pit and scoop out the flesh. Put the flesh in a non-reactive bowl, such as a glass or ceramic one.

Roughly mash the avocado, taking care not to mash it so that it is smooth. It should retain a slightly coarse texture.

Fold in the remaining ingredients. Cover and refrigerate for at least 1 hour for the flavors to blend. Serve on the day it is made with chips or topping tacos.

Also serve with fresh or fried vegetables, chicken wings or use it as a topping for grilled meat, poultry, fish or egg dishes.
