1/2 cup plain nonfat yogurt
2 teaspoons dry mustard, or 1 tablespoon prepared mustard, without added salt
1 tablespoon cider vinegar
2 teaspoons chili powder
2 teaspoons sugar
salt, if desired
fresh ground black pepper, if desired
3 medium carrots, about 8-ounces total, peeled
2 tablespoons fresh parsley, chopped
1/3 cup dried currants, or raisins
1/4 cup (1 oz.) chopped walnuts

In a large bowl whisk together the yogurt, mustard, vinegar, chili powder, sugar, and salt and pepper to taste. Grate the carrots, either with a food processor or by hand, and add to the bowl along with the parsley and currants or raisins. Toss to mix, then refrigerate for several hours, tossing occasionally.
