Tuna Walnut Pockets
For a light supper or lunch, serve these sandwiches with pickles and potato chips, or slices of fresh fruit. This is the perfect brown bag lunch.

1 (6-7 ounce) can water-packed tuna, well-drained
1/4 cup finely chopped celery
1 hard boiled egg, white only, finely chopped
1/4 cup plain nonfat yogurt
2 teaspoons lemon juice
1 tablespoon chopped fresh tarragon, dill or parsley
1/4 cup finely chopped walnuts, toasted if desired
salt, if desired
fresh ground black pepper, if desired
2 whole wheat pita bread, halved to make 4 half-moons
8 leaves iceberg lettuce, (or other crisp lettuce leaves)
1 cup sprouts, such as alfalfa sprouts or onion sprouts

Put the tuna in a small bowl and break it up with a fork. Add the celery, egg, yogurt, lemon juice, herbs, and walnuts and blend well. Season, if desired, with salt and pepper to taste.

Divide the tuna salad among the pita pockets, placing about 1/3 cup in each. Tuck in a lettuce leaf and some sprouts. Serve immediately.
