Stuffed Mushrooms

8 large (about 8 ounces) white button mushrooms
Light vegetable oil cooking spray
1 slice light whole wheat bread, freshly toasted
2 tablespoon fresh flat leaf parsley, chopped
2 teaspoon garlic, chopped
4 teaspoons brandy
5 teaspoons water
1/4 teaspoon salt
1/8 teaspoon black pepper, freshly ground




Preheat the broiler.

Clean and stem the mushrooms. Cut the stems into chunks and reserve.

Spray a glass baking dish once lightly with the vegetable oil spray. Place the mushrooms in the dish, stem side down. Broil for 3 to 4 minutes, until lightly browned. Remove and set aside, leaving the broiler on.

Rip the toast into chunks and place it in the bowl of a food processor. Add the parsley and the reserved mushroom stems. Process to a fine consistency.

Turn the mixture into a bowl. Stir in the garlic, brandy, and water. Add the salt and pepper and combine thoroughly. Turn the mushrooms over and stuff about 1 tablespoon into each. Broil for 5 to 6 minutes, until browned.

Serve hot or room temperature.
