Potato Salad
No picnic or barbecue is complete without potato salad.

4 pounds Idaho potatoes, washed, scrubbed
1 diced red onion
1 1/2 cups celery, diced
fresh ground black pepper, to taste
salt, to taste
1 pint mayonnaise




Boil potatoes in salted water until tender (time varies depending on size). When cool enough to handle, peel and cut into ½-inch chunks. Combine remaining ingredients in a bowl. Add potatoes and toss to coat with dressing. Chill until ready to serve.

Buy the freshest oysters and finest caviar you can afford. The only tricky part is shucking the oysters. If you don't have the patience or tools to do it yourself, ask the fishmonger for help. Be sure to cook the oysters very soon after you get home because once they are shucked, they lose freshness.
