Reuben Sandwich

8 slices rye bread
4 tablespoons Thousand Island dressing
3/4 pound thinly sliced, cooked corned beef brisket
1 cup sauerkraut
6 ounces thinly sliced Swiss cheese
4 tablespoons margarine




Heat a non-stick skillet over medium heat.
Spread the inside of each slice of rye with 1/2 tablespoon of Thousand Island dressing. Layer 4 slices of rye with corned beef, saurkraut, Swiss cheese. Top with remaining 4 slices of rye. Spread the outsides of each sandwich with 1/2 tablespoon each of margarine.

Cook sandwiches in skillet until lightly toasted on both sides and Swiss cheese is melted. Cut sandwiches in half and serve immediately.
