Mixed Greens with Fruit and Orange-Raspberry Vinaigrette
Serve this light and refreshing salad for lunch. It is also the perfect complement to any dinner.

grated orange zest, from 1/2 orange
1/3 cup fresh orange juice, (1 1/2 to 2 oranges)
1/4 cup vegetable oil
3 tablespoons raspberry vinegar
1 tablespoon shallots, finely minced
1 teaspoon Dijon mustard
1 teaspoon honey
salt, to taste
fresh ground black pepper, to taste
6 cup mixed salad greens
1 orange, peeled and cut into half-cartwheel slices or 1 orange, peeled and separated into segments
1/2 cup raspberries




To make vinaigrette, in jar with lid, combine orange peel and juice, oil, vinegar, shallot, mustard, honey, salt and pepper. In large salad bowl, toss greens with enough vinaigrette to coat. Garnish greens with oranges and raspberries. Drizzle fruit with any remaining vinaigrette.
