Fruit and Chicken Salad

Grated zest of 1/2 orange
3 tablespoons fresh orange juice
1 1/2 tablespoons vegetable oil
1 tablespoon honey
1/4 teaspoon curry powder
1/4 teaspoon ground ginger
1 cup shredded cooked chicken
1 cup cooked orzo, (1/3 cup before cooking)
2 oranges, peeled and cut into bite-size pieces
2 bananas, peeled and sliced
1 red delicious apple, peeled, cored, and cut into bite-size pieces
1 cup green grapes or red grapes, cut in half
1/2 cup chopped celery




In large bowl, combine lemon zest and juice, oil, honey and spices.

Mix in the chicken and remaining ingredients, toss, cover, and refrigerate.

Serve on salad greens and garnish with lemon cartwheels or wedges and fresh mint leaves.

Your favorite fruit can be substituted.


Serving Suggestion: Serve with crusty baguettes or toasted garlic bread.
