Cottage Cheese Fritters with Applesauce

1 cup low-fat cottage cheese
5 tablespoons flour
1 teaspoon cinnamon
2 egg yolks
1 egg white
Crisco® Vegetable Oil
unsweetened applesauce
sour cream

Heat the oven to 200 degrees.

Combine the cottage cheese, flour, cinnamon and egg yolks in a bowl. In another bowl, beat the egg white with a whisk until stiff, shiny peaks form. Gently fold the egg white into the cheese mixture.

Pour the vegetable oil into a skillet to a depth of 1/4 inch. Heat over medium-high heat. Drop rounded teaspoons of the cheese mixture into the hot oil and cook for 1 to 2 minutes on each side until golden brown. Drain the fritters on paper towels and keep warm in the oven while you cook the rest.

Serve immediately with spoonfuls of applesauce and sour cream.
