Orange and Ricotta Pudding

1 pint strawberries
1/3 cup orange juice
2 pounds fresh ricotta cheese
1/4 cup sugar
1/4 cup heavy cream
1/2 cup semisweet chocolate, chopped

Halve the strawberries and put them in a small bowl with the orange juice. Let them soak for 10 minutes.

Press the ricotta through a sieve or beat with a whisk until fluffy.

Stir the sugar and cream into the ricotta. Fold in the strawberries and their juices. Fold in the chocolate. Spoon the mixture into individual serving dishes and refrigerate for 10 minutes before serving.
