Hot Apple Pie in a Goblet

3 large Golden Delicious apples, peeled, cored and coarsely chopped
1/4 cup sugar
1/4 cup water
1/2 teaspoon cinnamon
16 shortbread cookies, crumbled
1 pint low-fat vanilla frozen yogurt

Combine the apples, sugar, water and cinnamon in a medium-sized saucepan and bring to a simmer over medium heat. Cover and cook, stirring occasionally, for 15 minutes. Remove the lid and cook for 5 minutes more, until the apples are soft and the liquid has almost evaporated.

Divide half the cookie crumbs among 4 goblets or wide-bowled wine glasses sprinkling the crumbs in the bottom of the glasses. Divide the frozen yogurt between the goblets and top each with a quarter of the apples. Sprinkle the top of each with the remaining cookie crumbs and serve immediately.
