Orange Spice Muffins
A heady combo of orange and spices make these muffins special for a weekend breakfast.

1 cup all-purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
1 1/4 teaspoons cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 egg
1 cup sour cream or plain yogurt
1/4 cup Vegetable Oil, or melted butter
1 tablespoon frozen orange juice concentrate, thawed
1 tablespoon finely grated orange rind
1/3 cup brown sugar
1 tablespoon sugar




Position a rack in the upper third of the oven. Heat the oven to 400 degrees. Butter 12 muffins cups.

Sift together the flours, baking powder, 3/4 teaspoon of the cinnamon, the cloves, nutmeg and salt.

Beat the egg with the sour cream or yogurt, the oil or butter and the orange juice concentrate. Stir in the orange rind and brown sugar and mix well.

Add the sour cream mixture to the dry ingredients and stir until just combined. Fill the prepared muffin cups about two-thirds full.

Combine the remaining 1 tablespoon sugar with the remaining 1/2 teaspoon cinnamon and sprinkle over the muffins. Bake for 25 minutes until risen and lightly browned.
