Pear-Walnut Muffins

1 1/2 cups all-purpose flour
1/2 cup packed brown sugar
2 1/4 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 medium-size pear, unpeeled, cored and chopped
1 egg
1/2 cup plain lowfat yogurt
1/2 teaspoon vanilla
1/2 cup vegetable oil




Position a rack in the upper third of the oven. Heat the oven to 350 degrees. Butter 9 muffin cups.

Sift the flour, brown sugar, baking powder, cinnamon, ginger and salt together into a large bowl, rubbing the sugar through. Stir in the chopped pear.

Whisk together the egg, yogurt, vanilla and oil. Sir into the dry ingredients until just combined. Do not overmix. Fill the prepared muffin cups about two thirds full.

For the topping: mix together 3 tablespoons finely chopped walnuts and 3 tablespoons packed brown sugar. Spoon about 1/2 teaspoon of the nut mixture onto the top of each muffin. Bake the muffins for 20 to 25 minutes, until risen and lightly browned.
