Spaghetti Squash with Garlic

1 large spaghetti squash
4 tablespoons butter or margarine
1 clove garlic, finely chopped
2 tablespoons chopped parsley
salt, to taste
freshly ground pepper, to taste

Fill the bottom of a vegetable steamer with enough water to come to within 1 inch of the steamer tray. Cover the steamer and bring the water to a simmer over medium heat.

Cut the squash in half lengthwise and scoop out the seeds. Put the squash on the steamer tray, cut side down. Cover the pan and steam the squash for 40 minutes. Heat the butter in a large frying pan over low heat. Add the garlic and cook, stirring, for 2 minutes. Scoop the squash out of its skin, pulling it into strands. Add it to the garlic butter and toss. Add the parsley and season with salt and pepper to taste. Toss again and serve.
