Zucchini Gratin

2 tablespoons olive oil
1 pound zucchini, thinly sliced
Salt and freshly ground pepper
3 tablespoons Grated Parmesan cheese

Heat the oven to 450 degrees.

Brush an 8- by 11-inch baking dish with 1 tablespoon oil. Arrange overlapping slices of zucchini in the dish and sprinkle with salt and pepper. Drizzle with the remaining tablespoon of oil and sprinkle with the cheese. Bake for 15 to 20 minutes until the zucchini is tender and the cheese is golden brown.
