2 tablespoons olive oil
1 red onion, thinly sliced
1 sweet red pepper, ribbed, cut into 2-inch-by -1/2 inch strips
1/2 cup corn kernels, fresh or frozen
1 medium-size clove garlic, finely chopped
1 tablespoon lime juice
2 teaspoon chili powder
salt, to taste
freshly ground pepper, to taste

In a medium frying pan over medium-high heat, cook the onion in the olive oil for 1 minute.

Add the remaining ingredients and cook, stirring often, for about 2 minutes until the vegetables are crisp-tender. Serve immediately.
