Cheese, Bacon and Egg Pie
This crustless egg pie works any time of day, but especially for a weekend breakfast.

2 to 3 slices bacon
1/4 cup chopped onion
2 cups plain croutons
1 cup grated Cheddar cheese
4 eggs
2 cups half-and-half
1/2 teaspoon salt
1/2 teaspoon Dijon mustard
1/8 teaspoon pepper, freshly ground




Put the bacon on a double thickness of paper towel on a microwave-safe rack or a paper plate and cover with a paper towel. Microwave on (100 percent) for 2 1/2 to 3 minutes, until the bacon is crisp.

Put the onion in a small microwave-safe dish.
Cover and microwave on High (100 percent) for 45 seconds to 1 minute, until soft. Combine the croutons and the cheese in an 8-inch round microwave-safe dish.

Whisk together the eggs, half-and-half, salt, mustard and pepper. Stir in the onion. Pour the mixture over the croutons and cheese. Crumble the bacon and sprinkle it over the top. Microwave on Medium (50 percent) for 20 to 25 minutes, until a knife inserted in the center comes out clean.
